Information for ingredient: spinach

Growing season
General description
One of the first fresh greens to come from the garden after the winter, Spinach is a true winter king. The leaves of this vegetable can be eaten as a salad. Steamed with potatoes, or used as an ingredient in a variety of Indian and Italian dishes.

As it emerges very early in the season it is particularly useful.

Note: This vegetable will start flowering when summer hits. Spinach cn be sowed a second time after the longest day of the year has passed, so in Late August and throughout September. Harvest then takes place in December and January.

Growing
Prepare the soil for growing by turning and raking to create an even surface. As spinach likes a well-fertilized soil consider pre-fertilizing in the fall preceding sowing. Sown thinly in rows of 2cm deep, 30 cm apart. Keep soil most until the spinach has established.
