Zwiebelkuchen (onion cake)

Ingredients

cream 125 ml
cheese (gouda) 150 gram
bacon (streaky) 100 gram
onions 750 gram
butter 120 gram
salt 1 teaspoon
eggs 2 slice
milk 250 ml
yeast (fresh) 1 cube
flour 500 gram

Preparation

  1. Mix the flour, yeast, sugar, milk, salt, 60g of butter, and one egg to make the dough. Leave the dough to rest.
  2. Meanwhile, peel the onions and cut into thin slices, then fry in butter. Leave to cool.
  3. Roll out the dough on a buttered tin, spread the cooled onions, and season with pepper and caraway.
  4. Cut the bacon in small dices and spread over the onions. Grate the cheese and cover the bacon with it.
  5. Mix one egg with the cream and pour over the bacon.
  6. Leave again to shortly rest in the 50C warm oven, then bake off for 25 to 30 minutes at 200C until brown.
  7. Serving suggestionServe as a starter or snack (cut into points), or as a main dish. If you prefer, you can portion the dough, serving one (smaller) onion cake per person.
