guacamole (basic recipe)
Ingredients

Preparation
- Squeeze the limes (keeping the juice). The avocados should be ripe when bought, but not over-ripe.
- Peel and halve the avocado, then remove the pit. Spoon the pulp into a bowl and immediately sprinkle with the juice of one lime.
- Peel the onion, finely chop, and add to the avocado. Season with salt, pepper, and cayenne pepper. Using a fork, squash to a homogeneous mass (or puree).
- While squashing/pureeing, carefully add a bit of lime juice at a time, adding salt, pepper, and cayenne pepper, if needed.
