prawns in coconut cream


Ingredients

king prawns 1250 gram
coconut cream 185 ml
lime 1
soy sauce (light) 1 teaspoon
shrimp paste 1 teaspoon
peanut oil 1 tablespoon
onion 1
spring onions 2

Preparation

  1. Peel and clean the king prawns, but do not remove the tails.
  2. Wash the lemon and grate the peel. Keep 1 teapoon for cooking. Squeeze the lemon, and keep 1 tablespoon for cooking.
  3. Mix the coconut cream, grated lemon peel, the lemon juice, soy sauce, and shrimp paste.
  4. Peel and chop the onions, then fry them until glassy. Add the king prawns and fry for 2 minutes, while stirring constantly.
  5. Add the seasoned coconut cream and simmer for 3 minutes until well warmed.
  6. Serving suggestionServe with rice.
