mango chutney


Ingredients

mangoes 400 gram
onions 75 gram
garlic 1 clove
walnuts 75 gram
wine vinegar (white) 150 ml
raisins 50 gram
clove 1
sugar 150 gram
cayenne pepper 1 dash
lemon juice 1 tablespoon

Preparation

  1. Prepare a jam pot (wash, disinfect if necessary etc.)
  2. Peel the mango and cut into pieces (keep the pit). Peel and finely chop the onion, garlic, and walnuts.
  3. In a big pan, simmer the mango pieces, the mango pits, onion, garlic, and vinegar for 30 minutes, while stirring from time to time. Then remove the mango pits.
  4. Add the raisins, clove, and sugar, and leave to simmer for another 10 minutes.
  5. Season to taste with cayenne pepper, lemon juice, and salt. Leave to simmer for another 10 minutes, until the consistency is jam-like. Add the walnuts to the chutney.
  6. Pour into the jam pot, cover with cling foil, and close with a lid. Leave to cool, and keep in the fridge until used.
  7. Serving suggestionServe with pepper pate, or as dip with cassava crisps/chips.
    Tip!Unopened, the chutney can be kept in the fridge for a couple of weeks.
