mango chutney
Ingredients

| lemon juice | 1 tablespoon |
Preparation
- Prepare a jam pot (wash, disinfect if necessary etc.)
- Peel the mango and cut into pieces (keep the pit). Peel and finely chop the onion, garlic, and walnuts.
- In a big pan, simmer the mango pieces, the mango pits, onion, garlic, and vinegar for 30 minutes, while stirring from time to time. Then remove the mango pits.
- Add the raisins, clove, and sugar, and leave to simmer for another 10 minutes.
- Season to taste with cayenne pepper, lemon juice, and salt. Leave to simmer for another 10 minutes, until the consistency is jam-like. Add the walnuts to the chutney.
- Pour into the jam pot, cover with cling foil, and close with a lid. Leave to cool, and keep in the fridge until used.
