curry of roasted potatoes with shrimps

Ingredients

shrimps 100 gram
potatoes (waxy) 500 gram
onion 1
garlic 1 clove
green peas 100 gram
cream 50 ml
butter oil 2 tablespoon
curry powder 1 tablespoon
salt 1 dash
pepper 1 dash
lemon juice 1 sprinkle
mint 1 sprig
chili powder 1 dash

Preparation

  1. Peel the potatoes and cut into cubes. Peel the onions, halve, and cut into slices. Peel and chop the garlic.
  2. Fry the potatoes and onions for 15 minutes, stirring regularly. Season to taste with salt, pepper, and 1 teaspoon of curry powder.
  3. Meanwhile, in a different pan, fry the shrimps and garlic for 4 minutes. Season to taste with salt and pepper. Remove from the pan and sprinkle with lemon juice.
  4. Sweat the remaining curry powder (in the shrimp pan), then blush with 250ml of water (warm). Add the (frozen) green peas, and leave to boil for 5 minutes. Season to taste with salt, pepper, curry powder, and chili powder.
  5. Whisk the cream, then carefully add to the sauce.
  6. Add the potatoes and shrimps and heat up again, but do not bring to boil. Season to taste.
  7. Serving suggestionGarnish with mint and/or parsley leaves, and serve immediately.
