medallion of boar with apple
Ingredients

| cranberries | 4 tablespoon | |
| sugar | 4 tablespoon | |
| cinnamon | 1 pinch | |
| butter | 60 gram | (unsalted) |
Preparation
- Heat the oven to 200C.
- Season the medallions with salt and pepper. Remove the cores from the apples. Mix the cranberries, sugar, and cinnamon, and fill the mix into the the apples. Close the whole with a small piece of butter, and wrap the apples in aluminum foil.
- Place the apples into the oven and bake for 20 minutes.
- Heat the remaining butter and sear the medallions on both sides. Lower the heat and fry the meat for 3 minutes per side (or longer, depending whether you want the meat red, medium, or well done).
- Remove the medallions from the pan and blush the baking liquid with white wine.
