Flammkuchen (tarte flambee)


flour (all-purpose) 300 gram
yeast 30 gram (fresh)
sugar 1 tablespoon
bacon (streaky) 200 gram
salt 1 pinch
pepper 1 pinch
oil 3 tablespoon
sour cream 300 gram
egg yolk 1
nutmeg 1 pinch (freshly ground)
oil 2 tablespoon


  1. Pour the flour into a bowl and make a dent in the middle of it. Crumble the yeast and stir in the sugar. Add 7 tablespoons of lukewarm water and stir until smooth. Pour the yeast mix into the dent in the flour, mix with a bit of flour from the edge, and cover with a kitchen towel. Leave to rest in a warm place for 10 to 15 minutes.
  2. Meanwhile, peel the onions, halve them, and cut them into thin rings. Cut the bacon into small cubes and fry in a hot pan. Add the onions and fry for 2 to 3 minutes. Season to taste with little pepper and salt, and leave to cool down.
  3. Add the 3 tablespoons of oil and half a tablespoon of salt to the dough, and mix until smooth. Cover the bowl again and leave to rest in a warm place for another 20 to 30 minutes.
  4. Preheat the oven to 200C.
  5. Mix the sour cream and egg yolk with a bit of salt, pepper, and nutmeg. Oil and flour a baking tray (approx. 23x29 cm), then thinly roll out the dough on it. Pour the sour cream mix on t, and sprinkle with the bacon and onion mix.
  6. Bake for 15 minutes on the lowest rail in the oven.
