Flammkuchen (tarte flambee)
Ingredients

| nutmeg | 1 pinch | (freshly ground) |

Preparation
- Pour the flour into a bowl and make a dent in the middle of it. Crumble the yeast and stir in the sugar. Add 7 tablespoons of lukewarm water and stir until smooth. Pour the yeast mix into the dent in the flour, mix with a bit of flour from the edge, and cover with a kitchen towel. Leave to rest in a warm place for 10 to 15 minutes.
- Meanwhile, peel the onions, halve them, and cut them into thin rings. Cut the bacon into small cubes and fry in a hot pan. Add the onions and fry for 2 to 3 minutes. Season to taste with little pepper and salt, and leave to cool down.
- Add the 3 tablespoons of oil and half a tablespoon of salt to the dough, and mix until smooth. Cover the bowl again and leave to rest in a warm place for another 20 to 30 minutes.
- Preheat the oven to 200C.
- Mix the sour cream and egg yolk with a bit of salt, pepper, and nutmeg. Oil and flour a baking tray (approx. 23x29 cm), then thinly roll out the dough on it. Pour the sour cream mix on t, and sprinkle with the bacon and onion mix.
- Bake for 15 minutes on the lowest rail in the oven.
