| butter (unsalted) | 15 gram | |
| salt | 1 pinch | |
| pepper | 1 pinch | |
| wine vinegar (red) | 2 teaspoon | |
| cranberry jelly | 1 tablespoon | |
| game stock | 100 ml |
Preparation
- Peel the shallot and chop it very fine. With some kitchen paper, dip dry the deer sirloin.
- Heat the butter, then fry the meat for 4 minutes on each side until brown. Season with pepper and salt, then remove the meat from the pan and keep it warm on a plate covered with a double layer of aluminium foil.
- Using the same pan and butter, quickly fry the shallots.
- Add the vinegar, cranberry jelly, and the game stock, increase the heat, and boil for about 1 minute.
