Summer Salsa


Ingredients

tomatoes 2
cucumber 1
chili peppers 3
lime 1
spring onions 2
coriander 5 leaf
avocado 1
salt 1 pinch

Preparation

  1. Place the bell pepper in boiling water for a minute, and drop it in cold water, to release the skin. Use the pealed bell pepper. Alternatively you could used pre-peeled peppers, or italian pickled garlic peppers.
  2. Chop tomatoes, 1/4 cucumber, chilis, coriander and 1/2 avocado in .5cm cubes. Chop spring onions in tiny pieces.
  3. Mix it all and add the olive oil, salt, pepper and lime juice.(Taste to ensure the flavour matches your preference)
  4. Serving suggestionServe as a side with fish or as a dip with crisps
