Summer Salsa
Ingredients

| salt | 1 pinch |
Preparation
- Place the bell pepper in boiling water for a minute, and drop it in cold water, to release the skin. Use the pealed bell pepper. Alternatively you could used pre-peeled peppers, or italian pickled garlic peppers.
- Chop tomatoes, 1/4 cucumber, chilis, coriander and 1/2 avocado in .5cm cubes. Chop spring onions in tiny pieces.
- Mix it all and add the olive oil, salt, pepper and lime juice.(Taste to ensure the flavour matches your preference)
