fried egg in a capsicum / bell pepper (sunny side up)
Ingredients
| bell pepper (red) | 1 | |
| butter (for baking) | 25 gram | |
| eggs | 4 | |
| parsley | 2 tablespoon | (chopped) |
Preparation
- Remove the upper side and under side of the bell pepper. Cut the bell pepper into 4 rings of at least 1cm thick. Place the rings on a cutting board, remove the seeds, but be careful not to damage the bell pepper rings.
- Heat the butter in a pan, and shortly fry the bell pepper rings on both sides. Then, carefully break one egg into one bell pepper ring each, and bake until the egg yolk is not runny anymore (or until the egg is the way you like it).
