fried egg in a capsicum / bell pepper (sunny side up)


Ingredients

bell pepper (red) 1
butter (for baking) 25 gram
eggs 4
parsley 2 tablespoon (chopped)

Preparation

  1. Remove the upper side and under side of the bell pepper. Cut the bell pepper into 4 rings of at least 1cm thick. Place the rings on a cutting board, remove the seeds, but be careful not to damage the bell pepper rings.
  2. Heat the butter in a pan, and shortly fry the bell pepper rings on both sides. Then, carefully break one egg into one bell pepper ring each, and bake until the egg yolk is not runny anymore (or until the egg is the way you like it).
  3. Serving suggestionPlace each bell pepper egg on a plate, season with pepper and salt, and serve sprinkled with parsely.
    Tip!To have a complete meal, use bread slices or tortillas layered with ham, place the bell pepper eggs on them, sprinkle with grated cheese, and bake off in the oven until the cheese has melted.
