winter vegetable roast


Ingredients

Hokaido pumpkin 1
onions (red) 2
rosemary 2 sprig
aceto balsamico 4 tablespoon
garlic 1 bulb
carrots 2
mushrooms 200 gram
potatoes (waxy) 250 gram
olive oil 6 tablespoon
sea salt 1 handful
pepper 1 pinch (freshly ground)

Preparation

  1. Preheat the oven to 200C. Cut the pumpkin (remove the seeds), onions, carrots, mushrooms, and potatoes into chunks.
  2. Place all the vegetables on a tray, add the rosemary, salt, pepper, and aceto balsamico. Stir and mix all ingredients.
  3. Roast the vegetables for 40 minutes.
  4. Serving suggestionServe hot, either as a main dish with a salad, or as a side dish with meat and/or a salad.
    Tip!This recipe can easily be varied with other vegetables.
