chocolate muffins from Trinidad

Ingredients

powdered sugar 1 sprinkle
eggs 5
egg yolks 5
sugar 125 gram
dark chocolate (75% cocoa) 225 gram
butter 225 gram
rum 4 tablespoon
flour (wheat) 100 gram

Preparation

  1. Whisk the eggs, egg yolks and sugar until foamy. Melt the chocolate and butter au bain marie. Add the rum and the egg-and-sugar mix. Then carefully add the flour.
  2. Butter muffin forms and sprinkle them with sugar, then fill in the batter (approx. 180 ml per cup), cover with cling foil and keep cool over night (important!).
  3. Before serving, bake off for 10 to 15 minutes at 180C until the middle part breaks open and the muffins look dry.
  4. Serving suggestionSprinkle with powdered sugar and serve warm.
