baked apples with vanilla sauce
Ingredients

| milk | 400 ml | |
| vanilla sugar | 2 pack | |
| egg yolks | 4 | |
| powdered sugar | 120 gram | |
| vanilla extract | 2 teaspoon |
Preparation
- Preheat the oven to 200C.
- From the 6 tablespoons of cherries, remove 2 and cut those cherries into smaller pieces. Using a knife, remove the cores from the apples. Mix the chopped nuts, brown sugar, and the cherries.
- Place each apple on a piece of aluminum foil. Fill the holes in the apple with the nut and cherry mix. Place a small knob of butter on top, then fold the foil around the apples.
- Bake off the apples in the oven for approx. 25 minutes.
- For the sauce, bring to boil the milk, then add the vanilla sugar.
- Whisk the egg yolks, then add the powdered sugar (mix until frothy). Constantly stirring, add some of the milk to the mix, then - still stirring - pour that mix back into the remaining milk. Reduce the heat and leave to simmer until reduced to a sauce.
- Remove the foil around the apples.
