baked apples with vanilla sauce

Ingredients

pecan nuts 2 tablespoon (chopped)
brown sugar 1 tablespoon
cherries 6 tablespoon (depitted)
apples 4
butter 20 gram
milk 400 ml
vanilla sugar 2 pack
egg yolks 4
powdered sugar 120 gram
vanilla extract 2 teaspoon

Preparation

  1. Preheat the oven to 200C.
  2. From the 6 tablespoons of cherries, remove 2 and cut those cherries into smaller pieces. Using a knife, remove the cores from the apples. Mix the chopped nuts, brown sugar, and the cherries.
  3. Place each apple on a piece of aluminum foil. Fill the holes in the apple with the nut and cherry mix. Place a small knob of butter on top, then fold the foil around the apples.
  4. Bake off the apples in the oven for approx. 25 minutes.
  5. For the sauce, bring to boil the milk, then add the vanilla sugar.
  6. Whisk the egg yolks, then add the powdered sugar (mix until frothy). Constantly stirring, add some of the milk to the mix, then - still stirring - pour that mix back into the remaining milk. Reduce the heat and leave to simmer until reduced to a sauce.
  7. Remove the foil around the apples.
  8. Serving suggestionServe the apples covered in sauce, while still hot.
    Tip!Garnish the apples with some of the cherries.
