Spinache and pinenut pasta


Ingredients

spinach 200 gram
pasta 500 gram
pine nuts 25 gram
tomato puree 250 ml
garlic 1 clove
onion (small) 1
olive oil 1 tablespoon

Preparation

  1. Wash the spinach, peel & chop the onion
  2. Boil the pasta as instructed on the pasta (Or create fresh)
  3. Heat a skillet, pour the oil in the skillet and add the pine nuts and chopped garlic. When the start to change color (Turning lightly brown) add the spinach and heat for just a minute, until is goes soft. 
  4. Add the tomatoe puree and heat to boiling hot
  5. Add the pasta & serve
  6. Serving suggestionServe with fresh white bread & some grated Parmesan cheese
