spaghetti with green asparagus and rucola

Ingredients

asparagus (green) 1 kg
garlic 1 clove
shallot 1
rucola / rocket 1 pack
spaghetti 500 gram
butter (unsalted) 3 tablespoon
vegetable stock 150 ml
mascarpone 250 gram
salt 1 pinch
pepper 1 pinch

Preparation

  1. Wash the green asparagus, peel the lower third, and cut the stalks in pieces of 3cm.
  2. Peel and finely chop the garlic and shallot. Wash the rocket salad, drip dry and cut into bite-sized pieces.
  3. Boil the spaghetti in water (with a pinch of salt) for approx. 10 minutes (or as stated on the package).
  4. Heat the butter in a pan, and fry the garlic and shallot until glassy. Add the asparagus and fry as well.  Add the vegetable stock and leave to simmer, then add the mascarpone and simmer for approx. 10 minutes. Season to taste with pepper and salt.
  5. Serving suggestionServe the spaghetti covered in the asparagus and mascarpone mix, and garnish with the rocket salad.
