Spanish skewers


Ingredients

saffron 1 pack
pork fillets 400 gram (cubed)
ginger (2cm) 1 Piece
shallot 1 (finely chopped)
red pepper (hot) 1 (sliced)
olive oil 6 tablespoon
dry sherry 3 tablespoon
honey 1 tablespoon
paprika powder 1 teaspoon
djinten 0.5 teaspoon
cinnamon 35 tablespoon
laurel 2 leaf

Preparation

  1. In a bowl, water the saffron for approx. 10 minutes in half a tablespoon of warm water.
  2. Add the meat cubes (pieces of approx. 2 cm) and all the remaining ingredients to the bowl, then cover and leave to marinade for at least 2 hrs in the fridge.
  3. Water wooden skewers to avoid burning on the BBQ, then skewer the meat cubes.
  4. Heat the BBQ (or oven grill, or frying pan) and fry the meat for approx. 8 to 10 minutes until ready.
  5. Serving suggestionServe on a bed of fried bell pepper stips.
  6. [tips]Replace the saffron with saffron powder or kurkuma. Add lemon parts to the skewers, alternate with the meat.[/tips]
