grilled (pointy) peppers with mango and lime salad

Ingredients

mangoes 2 (cubed)
onion (red, small) 1 (finely chopped)
coriander / cilantro 1 handful (finely chopped)
lime juice 1 dash
tabasco 1 dash
salt 1 pinch
olive oil 2 tablespoon
peppers (long, pointy) 2

Preparation

  1. Mix the mango cubes in a bowl with the red onion, coriander, lime juice, tabasco and salt (season to taste).
  2. Brush the pointy peppers with olive oil and bbq them for approx. 3 minutes on each side, until turning a light brown. Remove the seeds (and peel, if you prefer), then cut the peppers into rings.
  3. Serving suggestionServe the grilled peppers with lean meat, and the salad as a side dish.
    Tip!Garnish the mango and lime salad with some slices of lime.
