salmon stir fry with broccoli and peppers


Ingredients

broccoli 200 gram (in parts)
lemon 1
stir fry oil 2 tablespoon
salmon fillet 250 gram (sliced)
salt 1 dash
pepper 1 dash (freshly ground)
ginger (2cm) 1 Piece
garlic 1 clove (finely chopped)
onion (red) 1 (in parts)
bell pepper (yellow) 1 (sliced)
soy sauce 2 tablespoon
sesame seed 1 tablespoon
spring onion 1 (sliced)

Preparation

  1. Wash the lemon, rasp 1 tea spoon of the peel, then squeeze the lemon juice.
  2. Heat 1 tablespoon of the oil and fry the salmon strips with the lemon peel for approx. 2 to 3 minutes on a high flame. Sprinkle the salmon with salt and pepper, then remove the fish from the wok/pan and keep warm in aluminium foil.
  3. Heat the remaining oil and fry the broccoli for approx. 5 minutes (or until tender). Add the ginger, garlic, onion and bell pepper and fry for approx. 3 to 4 minutes. 
  4. Add the fish, lemon juice and soy sauce en leave to heat up.
  5. Serving suggestionServe sprinkled with sesame seeds and the rings of spring onion.
