curd with warm fruits

Ingredients

yoghurt (natural) 500 ml
vanilla sugar 2 pack
cream 125 ml
peaches 2
grapes (red) 1 bunch
blackberries 1 pack
mint 8 leaf
baking dish 1

Preparation

  1. Place a kitchen cloth in a colander, then place the colander into a (bigger) bowl. Spoon the yoghurt (it should be 'fat' yoghurt, not a light version) into the cloth, and leave the liquid to drain, leaving a 'thick' creamy mass to build up. Place the yoghurt for at least 4 hours, preferably for one whole night, into the fridge, leaving it to drain.
  2. Add 1 pack of vanilla sugar to the cream, then whip the cream until stiff. Carefully spoon the whipped cream into the yoghurt mass.
  3. Heat the oven to 200 C. 
  4. Butter the baking dish. Cut the peaches into half and remove the pit, then distribute the halves on the baking dish. Cut the red grapes (they should be a seedles variety!) into smaller bunches and place them with the blackberries on the baking dish, as well. Sprinkle the fruits with the remaining pack of vanilla sugar, then bake off for about 20 minutes.
  5. Using a cold and wet spoon, scoop out the curd.
  6. Serving suggestionServe the curd scoops with the warm fruits./

    Tip!Sprinkle some of the warm fruit liquid around the fruits/curd, and decorate with mint leaves.
