herb salad with lemon dressing


Ingredients

mint 20 gram (fresh)
coriander / cilantro 20 gram (fresh)
flat-leaf parsley 20 gram (fresh)
olive oil (extra vergine) 1 tablespoon
lemon juice 1 teaspoon
lemon wedges 1 handful

Preparation

  1. Wash the herbs and gently dry between two tea towels or in a salad spinner.
  2. Pick the individual leaves from each sprig and discard any coarse stalks. Place the leaces in a large salad bowl.
  3. Drizzle with the oil and lemon juice and season generously, preferably with sea salt and freshly ground pepper. Toss well and serve immediately.
