Kale casserole


Ingredients

potato 1 kg
kale 500 gram (chopped)
olive oil 2 tablespoon
onion 1
basil 1 tablespoon (fresh)
ham 200 gram (lean)
tomato (canned) 0.5 liter
milk 150 ml
tomato (large) 2
mozzarella cheese 250 gram

Preparation

  1. Heat the oven to 200 degrees Celcius. 
  2. Peel the potatoes, wash them and cut them into cubes. Cook them in a large pan with some water. After 10 minutes, add the kale on top of the potatoes and cook together.
  3. Finely chop the onion and basil, and cut the ham and canned tomatoes in small cubes. Saute the onion in the olive oil, and then add basil, ham and tomatoes. Warm on medium heat.
  4. Mash the potatoes and kale together with the milk. Add the onion/ham/tomato and mix. Transfer to casserole or baking dish. Slice the large tomatoes and the mozzarella and layer those on top of the mash. 
  5. Bake in oven for 15-20 minutes until cheese is melted and golden brown.
