Honey Glazed Spare Ribes
Ingredients

| soy sauce | 50 ml | |
| honey | 50 ml | |
| garlic | 1 clove | (chopped) |
| spices (thyme, rosemary, marjorie) | 1 tablespoon |
Preparation
- Heat coals for the BBQ. Place the coals on one side of the BBQ
- Take the bone-side of the spare ribs, and carefully remove the membrame that covers the bones. Typically 2 membrames cover the bones. Only remove the outer one. This is done by inserting a knive underneath the membrame, and createing a little flap. Take the flap and carfully pull the membrame of the ribs
- Rub the ribs with your favourite spices, and add a little olive oil over the meat. Do not add salt!
- Place ahot waterbad next to the kot coals and add the grill over the coals and water bad
- Place the ribs bones down on the grill, above the waterbad (NOT over the coals)
- Close the grill with the temperature down as far as possible (im for 80-100c) and verify once an hour whether the coals are sufficient. If not, refil the coals.
- The meat is done when a toothpick easily slides between the bones
- Whe the meat is done, mix honey, soy sauce and garlic. Lather the top of the ribes with the mixture. Let bake for another 20 minutes with the grll cosed.
