sheep cheese au gratin

Ingredients

sheep cheese 500 gram
tomatoes 2
onions (white) 2
olive oil (classic) 6 tablespoon
rosemary, sage, thyme 1 bunch
salt 1 pinch
pepper 1 pinch (freshly ground)
parsley 2 bunch
lemon juice 1 dash

Preparation

  1. Preheat the oven to 200C. Finely chop the rosemary, sage and thyme. Cut the sheep cheese into 4 pieces. Wash the tomatoes and cut into slices. Peel the onions and cut into eights (lengthwise).
  2. Place the cheese on big sheet of aluminium foil, sprinkle with olive oil, top with the chopped herbs, and season to taste with salt and pepper. Add the tomato slices and onion parts on top, season lightly, and sprinkle with more olive oil.
  3. Fold the foil into a package, seal the edges (by folding the foil), place into the oven and leave to bake for 7 minutes. For the remaining 5 minutes, open the foil package on the top, and heat the oven to 250C.
  4. Wash the parsley, shake it dry, and chop it. Mix with the lemon juice and the olive oil, season to taste with salt and pepper.
  5. Serving suggestionServe the cheese sprinkled with the parsley and lemon juice mix.
