roasted potatoes with lemon and rosemary

Ingredients

potato (waxy) 1 kg
sea salt 1 pinch
lemon 2
garlic 2 clove
rosemary 3 sprig
olive oil 4 tablespoon

Preparation

  1. Wash the potatoes, clean them (without peeling them) and cut them into quarters. Boil the potatoes in salt water for 10 minutes. Drain and leave them to cool a bit.
  2. Preheat the oven to 225C. Wash the lemon and grate the peel of one of the lemons. Cut the remaining lemon into 6 pieces. Peel the garlic en cut it into slices. Remove the leaves of the rosemary from the stalks. Mix the lemon juice, garlic, rosemary, oil, and sea salt.
  3. Place the potatoes on a baking tray and add the the above mix. Place the lemon pieces between the potatoes and roast the potatoes in the oven for 25 minutes. While baking, stir the potatoes a couple of times.
  4. Serving suggestionWhen serving the potatoes, squeeze some of the warm lemon pieces over the roast.
