pumpkin chutney with apricots and raisins


Ingredients

pumpkin 1 kg (cubed)
onions (big) 2
apricots 200 gram
ginger (fresh) 1 Piece (finely chopped)
raisins 250 gram
salt 1 teaspoon
pepper corn 1 tablespoon
cinnamon 1 stick
clove 1
wine vinegar (white) 700 ml

Preparation

  1. Peel the onions and finely chop.
  2. Mix all ingredients in a pan, bring to boil, then leave to simmer for 60 to 90 minutes.
  3. When the pumpkin is soft, immediately fill into jars and seal. When the chutney cools down, the jars will form a vacuum, and yo ucan store the chutney for several months.
