Preparation
- Grate the lemon peel, and finely chop the coriander/cilantro leaves and the Spanish pepper.
- Heat the oil on medium heat, then add the dried fruits and the nuts. Stir until the apricots and nuts turn a nice brown color.
- Remove the pan from the heat, add the grated lemon peel, the chopped coriander/cilantro leaves, and the Spanish pepper.
- Mix well and season to taste with pepper and salt.
