sweet and sour baby onions

Ingredients

baby onions 350 gram
olive oil 2 tablespoon
bay leaves 2 leaf
lemon (rind) 1
brown sugar 1 tablespoon
honey 1 tablespoon
wine vinegar (red) 4 tablespoon

Preparation

  1. Soak the onions in a bowl of boiling water - this will make them easier to peel. Using a sharp knife, peel and halve the onions.
  2. Heat the onions in a large frying pan, add the bay leaves and onions to the pan and cook for 5 to 6 minutes.
  3. Cut the lemon rind into thin matchsticks. Add to the frying pan with the sugar and honey. Cook for 2 to 3 minutes, stirring occasionally, until the onions are lightly caramelized.
  4. Add the red wine vinegar to the frying pan, being careful because it might spatter. Cook for 5 minutes, stirring (until the onions are tender and the liquid has all but disappeared).
  5. Serving suggestionTransfer the onions to a serving dish and serve at once.
