pears au gratin with pistachio nuts

Ingredients

pears 4
butter (unsalted) 30 gram
honey 2 tablespoon
egg yolks 3
sugar 60 gram
pistachio nuts 60 gram (chopped)
pear liquor 2 tablespoon

Preparation

  1. Preheat the oven (with grill, if possible).
  2. Peel the pears, cut them into quarters, and remove seeds. Heat butter in a pan and fry the pear quarters. Add the honey and caramelize at low heat for 5 minutes. Remove pan from heat.
  3. Mix the egg yolks, sugar, and pear liquor in a new pan on low heat. Stir for 7 minutes until the mix is creamy. Add the pistachios (while keeping a handful as garnish).
  4. Divide the pears into 4 small oven-proof forms, and douse with the cream. Grill in the oven until the surface is a golden brown.
  5. Serving suggestionGarnish with the remaining chopped pistachio nuts, and serve hot.
