pears au gratin with pistachio nuts
Ingredients

| butter (unsalted) | 30 gram | |
| honey | 2 tablespoon | |
| egg yolks | 3 | |
| sugar | 60 gram | |
| pistachio nuts | 60 gram | (chopped) |
| pear liquor | 2 tablespoon |
Preparation
- Preheat the oven (with grill, if possible).
- Peel the pears, cut them into quarters, and remove seeds. Heat butter in a pan and fry the pear quarters. Add the honey and caramelize at low heat for 5 minutes. Remove pan from heat.
- Mix the egg yolks, sugar, and pear liquor in a new pan on low heat. Stir for 7 minutes until the mix is creamy. Add the pistachios (while keeping a handful as garnish).
- Divide the pears into 4 small oven-proof forms, and douse with the cream. Grill in the oven until the surface is a golden brown.
