carrots and onions with coconut milk (au gratin)


Ingredients

carrots 900 gram
onions (small) 3
butter (unsalted) 30 gram
milk 450 ml
coconut milk 220 ml
ginger (fresh) 2 teaspoon (finely chopped)
salt 1 pinch
pepper 1 pinch
Gruyere 90 gram

Preparation

  1. Preheat the oven to 120C.
  2. Peel the carrots and cut into slices. Peel the onions and chop. Fry the onions in some butter until glassy. Add the milk and coconut milk, then add the carrots, ginger, salt and pepper. Simmer for 20 minutes.
  3. Place the mix into an oven-proof form (or into smaller portion-sized forms), and top with the grated Gruyere cheese.
  4. Bake for 10 minutes until the surface is golden brown.
  5. Serving suggestionBefore serving, sprinkle with the coriander.
