risotto (basic recipe)

Ingredients

vegetable stock 600 ml
onion 1
garlic 1 clove
butter (unsalted) 2 tablespoon
risotto rice (arborio) 300 gram
cheese 100 gram (grated)
pepper 1 dash (freshly ground)
lemon juice 2 tablespoon
wine (white) 1 dash

Preparation

  1. Heat the oil in a pan and add the chopped onion and garlic, and stir until glassy.
  2. Add the risotto rice and fry until glassy.
  3. Lower the heat and add the wine. Increase the heat again and stir until the wine has been absorbed by the rice.
  4. Stirring, slowly add a dash of stock at a time, until absorbed by the rice. When the rice is ready (after approx. 20 minutes), stir in the butter.
  5. Serving suggestionSpoon the risotto into a serving bowl, mix in the grated cheese, and sprinkle with grated grana padano.
