risotto (basic recipe)
Ingredients

| garlic | 1 clove | |
| butter (unsalted) | 2 tablespoon | |
| risotto rice (arborio) | 300 gram | |
| cheese | 100 gram | (grated) |
| pepper | 1 dash | (freshly ground) |
| lemon juice | 2 tablespoon | |
| wine (white) | 1 dash |
Preparation
- Heat the oil in a pan and add the chopped onion and garlic, and stir until glassy.
- Add the risotto rice and fry until glassy.
- Lower the heat and add the wine. Increase the heat again and stir until the wine has been absorbed by the rice.
- Stirring, slowly add a dash of stock at a time, until absorbed by the rice. When the rice is ready (after approx. 20 minutes), stir in the butter.
