papaya soup with prawns (fom Tahiti)
Ingredients

| olive oil | 3 tablespoon | |
| onion | 1 | (chopped) |
| ginger (fresh) | 2 tablespoon | (finely chopped) |
| mint | 4 leaf | |
| water | 1 liter | |
| salt | 1 dash | |
| pepper | 1 dash | |
| prawns | 12 | |
| coconut flake | 1 handful |
Preparation
- Peel and de-seed the papaya, then cube the flesh (it should be approx. 600 gram).
- In 2 tablespoons of olive oil, fry the chopped onion until glassy. Add the ginger and fry for another 2 minutes. Add the papaya cubes, the chopped mint leaves, and water. Season to taste with salt and pepper. Stir and bring to boil. Then reduce the heat and leave to simmer for 20 minutes.
- Meanwhile clean the prawns and thread them onto 4 skewers (3 prawns on each skewer). Fry in the remaining oil for 3 minutes.
- Puree the soup if you prefer (it is not necessary), season to taste with salt and pepper.
