Preparation
- Peel and halve the avocado, and remove the stone. With a fork, mash the avocado pulp with some lemon juice.
- Mix the avocado mash with the creme fraiche.
- Cut the tomato in quarters, remove the seeds, and cut the pulp into small cubes. Crush the garlic clove. Chop the coriander leaves and the spring onion very finely.
- Carefully mix the avocado cream with the tomato, garlic, spring onion, and coriander.
- Season to taste with salt and pepper and leave for 10 minutes for the taste to develop.
