Herb tortilla de pappas

Ingredients

potato (waxy, big) 4
onions 2
eggs 8
milk 8 tablespoon
creme fraiche 8 tablespoon
salt 1 dash
pepper 1 dash
parsley 2 tablespoon (finely chopped)
olive oil 3 tablespoon

Preparation

  1. Peel and wash the potatoes, cut them into thick slices, then cut the slices into strips, and the strips into cubes. Peel and chop the onion. Whisk the eggs with the milk, creme fraiche, pepper, salt, and parsley.
  2. In a big pan, fry the potatoes for 5 minutes while stirring regularly. Add the onion and fry for another 5 minutes. Lower the heat, then add the egg mix without stirring (until the underside is firm).
  3. Carefully slide the tortilla on a lid, turn around he baking pan and slide the tortilla back into the pan, as to now fry the other side of the tortilla.
  4. Place the lid on the pan and bake the tortilla for another 5 minutes, until both sides are golden brown.
  5. Serving suggestionServe on a plate, cut into pieces.
    Tip!Sprinkle the tortilla with cheese while baking the last 5 minutes, and serve with a tomato or cucumber salad.
