watermelon and feta cheese salad


Ingredients

frisee lettuce 1
pine nuts 40 gram
watermelons 1500 gram
olives (black) 15
basil 1 bunch
olive oil 7 tablespoon
lemon juice 2 tablespoon
salt 1 dash
pepper 1 dash
feta cheese 100 gram

Preparation

  1. Wash the frisee head and leave to drip dry.
  2. Roast the pine nuts in a pan without oil until golden broun.
  3. Cut the watermelon into smaller parts, remove the seeds, then cut the pulp in cubes.
  4. Cut the olives (without stone) into parts.
  5. Divide the frisee lettuce with the melon and olive parts over 4 plates.
  6. Wash and chop the basil. Puree the basil with the olive oil and the lemon juice. Season to taste with pepper and salt, then pour this dressing over the salad.
  7. Serving suggestionSprinkle with pine nuts. Crumble the feta cheese and sprinkle over the plates.
