tagliatelle with tomato salsa


Ingredients

roma tomatoes 500 gram
onion 1
garlic 1 clove
olive oil 4 tablespoon
wine(red) 100 ml
bell pepper (red) 1
tomatoes 400 ml (peeled)
salt 1 dash
pepper 1 dash
basil 1 bunch
parmesan cheese 75 gram
tagliatelle 350 gram

Preparation

  1. Peel the tomatoes. From 1 tomato, remove the seeds and cut the pulp into cubes, then set aside for garnishing. Cut the remaining tomatoes into pieces.
  2. Peel and chop the onion and garlic. Finely chop the red pepper.
  3. Fry the onion and garlic in a pan until glassy, then blush with the red wine.
  4. Add all the fresh and the canned and peeled tomatoes, and the red pepper to the onion and garlic mix, then leave to simmer for 15 minutes. Season to taste with salt, pepper, and a pinch of sugar.
  5. Wash and chop the basil, rasp the cheese.
  6. Meanwhile, prepare the pasta as stated on the package.
  7. Add 3/4 of the basil to the tomato sauce.
  8. Serving suggestionDistribute the sauce over 4 pasta plates, then add the tagliatelle on top. Garnish with the tomato cubes, and sprinkle with the cheese grates and the remaining basil.
